Fried chicken breast with lemon yogurt sauce


Often when we prepare chicken breast, it ends up dry and without much flavor. With this recipe you can convert a boring breast into a delicious and tender marinated chicken with a refreshing lemon yogurt sauce.



Fried chicken breast sticks are great if you go out for a picnic day. This chicken breasts cut into long sticks can be easily eaten with fingers while you are outside enjoying the day.


The time you needed to prepare the chicken with the lemon sauce is 45 minutes although you will need 2 hours approximately to marinate it. This recipe is for 4 to 6 persons.
For the chicken you need:
  • 4 chicken breasts
  • 180 ml plain yogurt 
  • 1 lemon
  • 1/2 tsp white pepper
  • 100 gr bread crumbs or panko
  • 3 tbsp fresh chopped rosemary (you can add more if you like)
  • 75 gr grated parmesan cheese
  • salt and black pepper
sauce
  • 120 ml plain yogurt 
  • 4 tbsp mayonnaise 
  • lemon zest from one whole lemon
  • salt and black pepper

For the sauce, mix well all the ingredients in a small bowl including yogurt, mayonnaise, lemon zest and salt and pepper to taste. Let it rest in the fridge until served.


Let's prepare now the chicken. Start chopping the rosemary.


In a bowl place the bread crumbs, rosemary, grated parmesan cheese, salt and black pepper. Mix well. One good tip to get the chicken crispier is to cover this mixture with a plastic foil and keep it in the fridge to rest until you need it. The cold temperature will dry the mixture removing excess humidity from it and helping to get better results later on when you fry it.


Cut the chicken breast in strips.


In a bowl mix the yogurt, squeezed lemon, white pepper and add the chicken strips. Let it rest from 2 to maximum 3 hours in the fridge.


After it has rest, we take it from the fridge and start to prepare the sticks to be fried. In a plate or bowl place one by one the chicken strips removing the excess yogurt. Add salt and pepper to taste.


 Deep the sticks in the bread crumb mixture.


Heat the oil at 180°C.


Fry the sticks for approximately 5 minutes, until golden brown and place them in a plate or tray covered with kitchen paper towels to remove the excess oil.


It is ready! Serve them with the lemon sauce where you can deep the sticks. You can serve them with baked potatoes, or just carry them with the sauce to your picnic. You can even prepare a sandwich with them. With this marinate you could also use turkey or even fish if you prefer.
